Made this small cake plus 8 dozen cupcakes for a friend's daughter's baby shower that her sorority was throwing for her. Great theme for a baby shower! The lion cake says "King of the Jungle" on it.

French Macarons

These are french macarons...NOT macaroons (which are those coconut gooey cookies sometimes dipped in chocolate). Macarons are an almond meringue sandwich cookie usually flavored and filled with buttercream, ganache, or jam. I've been seeing them a lot lately and they are starting to be a very trendy pastry to serve at parties. What attracted me to them was the infinite combinations of flavors, fillings and colors you can make. Also, because I had read it's a very complicated and challenging recipe to master (I'm always up for a challenge). This batch is my 3rd attempt at making them (the other 2 just didn't turn out right). I have to say that I think I'm pretty close with this one. I'm trying to master the recipe before a baby shower I have coming up in a month. These are strawberry macarons with strawberry buttercream filling and plain almond (tinted green) with chocolate ganache filling. Stay tuned for more versions of this yummy "gourmet" dessert!

Thank you Paula Deen for this heavenly tasting but horribly fattening recipe! Had to take a dessert to our church lifegroup potluck and saw Paula make this on her show and just couldn't resist. Your typical pineapple upside down cake - except the double layer version (stacked on top of each other) and then just for added sweetness some pineapple buttercream icing around the sides! Ahhh! I won't tell you how many sticks of butter are in this whole recipe. It was delicious, but definitely a diet killer!

My first wedding cake! The bride was chinese so I made the chinese characters for "double happiness" as the topper (a common symbol in chinese weddings). I then made red fondant "buttons" down the front and the back to resemble the buttons used on popular chinese clothing. The cake was white almond sour cream with buttercream icing. Simple, but elegant.
